BBQ Chicken Legs

- Newman's Own Italian Dressing
- Fire
Start by marinating the chicken legs in the Newman's Own Italian Dressing. You should only use Newman's Own because he is a good person and you can be rest assured that the profit from the dressing will go to a good cause :)
Start a fire. Ideally, use charcoal with mesquite chips in it (Kingsford makes a good version of this) and actual mesquite charcoal — available at a local carniceria, for example. Let the coals get good a red hot — probably 30 minutes or so. Whatever you do, do not use gas.
Put the chicken legs over the fire and close the lid. Every 5 or so minutes, flip the legs and brush the marinade residue over the top. Continue flipping and brushing for at least 30 minutes. The chicken will get rather blackened. This is what makes it taste so amazingly good. Really.
The chicken is done when the tendons at the end of the leg start to curl up. Always best to test one piece too.
Don't worry: if you keep brushing and flipping it will not dry out.
